Apple and Kale Salad with Roasted Beets, Walnuts and Dried Fruit served with Ginger Dressing
Ingredients for 4 servings:
- Apples 2 pcs
- Lemon juice 15 ml
- Cold water 250ml
- Kale 80g
- Lettuce 100g
- Beets 60g
- Walnuts 40g
- Vegetable oil 60ml
- Fresh Ginger 20g
- Fresh garlic 5g
- Soy sauce 15ml
Wash the apples, remove the seed nests and cut them into cubes. Put in water with lemon juice. Wash the beets thoroughly, put them on a baking tray, put them in the oven and bake for about 2 h at 160°C. Then cool, peel and cut into cubes.
Roast walnuts in a pan for 3- 4 minutes, stirring constantly.
Wash and clean the kale and scald it for about 2 minutes in hot – boiling water, then transfer to cold water with ice. Then take out the kale, and dry it, cut or tear it into smaller pieces.
Put the lettuce in a bowl, then kale, apple cubes, nuts and roasted beet cubes.
Sauce:
Clean and peel fresh ginger. Grate garlic and ginger on a fine grater. Add a tablespoon of soy sauce and oil. Mix thoroughly.
Pour the sauce over the salad moments before serving.
