Baked apples with rhubarb, almonds and oatmeal with a hint of spice

Baked apples with rhubarb, almonds and oatmeal with a hint of spice

Ingredients for 4 servings:

  • Apples
  • Oatmeal 30 g
  • Rhubarb 200 g
  • Sugar syrup 150 g
  • Lemon juice 20 g
  • Ground cinnamon 1 g
  • Whole aniseed 4 stars
  • Raisins 10 g
  • Almonds 20 g
  • Honey – 4 tablespoons
  • Caster sugar 80 g

Wash the apples, cut off a slice about 1 centimeter off the top.
Hollow out the core. Sprinkle powdered sugar in the center.

Wash the rhubarb, peel and cut into cubes. Pour over sugar syrup, raspberry juice and lemon juice. Cook for about 10 minutes. Remove from heat and cool. Drain off the excess syrup.

Apple stuffing:
Place the oatmeal in a bowl. Add chopped almonds, raisins, rhubarb, cinnamon, and anise. Mix everything together thoroughly. Add honey.

Put the stuffing in the apples. Bake for about 15 minutes at 160 °C.

Serve the apples warm.
