Duck breast with caramelized apple and fruit

Duck breast with caramelized apple and fruit

Ingredients for 4 servings:

  • Duck breast 4 pieces (about 700g)
  • 2 Apples
  • Raspberries 50g
  • Blueberries 50g
  • Pea sprouts 10g
  • Parsley 50g
  • Thyme 5g
  • Minced garlic 20g
  • Sweet chilli sauce 80ml
  • Sugar 20g
  • Sunflower oil 100ml
  • salt, and pepper to taste.

Clean and wash the duck breast thoroughly. Season with salt and pepper. Chop the thyme.

Marinate duck breast in fresh thyme and garlic (10g). Set aside in the refrigerator for 12h.

Wash the apples and cut them into pieces. Add sugar and apples to the heated pan. Fry for about 3-4 minutes, stirring constantly, then add raspberries and blueberries, stir and remove from the heat.

Blend the parsley, vegetable oil (50ml) and garlic (10g) thoroughly.

Fry duck breasts starting with a cold pan, skin side down, until a golden crust forms. Then transfer to oven. Bake for about 7 minutes at 175°C
After baking put the meat in a warm place for 5 minutes, then cut into slices.

Drain the breast from the cooking juices.

Put the caramelized – fried apples, raspberries and blueberries on a plate. Pour the chilli sauce and parsley oil over the dish and garnish with pea sprouts.

Serve hot.
