Mackerel baked in apples and vegetables with fresh herbs

Mackerel baked in apples and vegetables with fresh herbs

Ingredients for 2 servings:

  • 2 Fresh mackerels
  • 4 Apples
  • 2 Carrots, medium size
  • Red currant 50g
  • Lemon juice 20 g
  • Cherry tomatoes 60 g
  • Dill 20g
  • Lemon juice – 50ml
  • Olive Oil 50ml

Wash the apples, cut two pieces into pieces and leave two apples whole.

Peel and slice the carrots with a decorating knife.

Clean and wash the mackerel, then marinate in lemon juice and season with salt and pepper.

Arrange all ingredients in a casserole dish and place it for 15 minutes in an oven preheated to 175°C.

After baking, transfer to a plate and sprinkle with dill and red currant fruit.
