Roast Beef Tenderloin Steak with Grilled Apple and Dried Mango, Chilli and Cilantro Salsa

Ingredients for 4 servings:

  • Apples – medium size 4 pcs
  • Beef Tenderloin 800g
  • Butter 40g
  • Dried mangoes 60g
  • Chilli 5g
  • Fresh Ginger 20g
  • Coriander 10g
  • Lemon juice 10ml
  • Peanut oil 20ml

Wash, dry and cut the apples into halves. Grill on the cut side for about 2 min. Then put it in the oven and bake for about 4 minutes at 180°C

Clean the tenderloin, then cut it into steaks of about 200 g. Then fry the steaks in a heated pan with a small amount of fat for about 2 minutes on each side. Subsequently, transfer to a sheet pan or skillet, put a slice of butter on the steak for each steak and bake for about 8 minutes at 180°C. Then remove the steaks, season with salt and pepper, and set aside in a warm place for about 5- 6 minutes.

Mango salsa:

Cut dried mangoes into small cubes. Add sugar syrup and lemon juice, and boil. Then cut the cilantro into smaller pieces or strips. Grate the ginger on a fine grater. Combine all the ingredients. Add lemon juice and peanut oil. Season gently with salt, and mix thoroughly.
