Stewed Apple Salad with Fresh Beets, Chilli, Pumpkin Seeds and Lemon Oil

Stewed Apple Salad with Fresh Beets, Chilli, Pumpkin Seeds and Lemon Oil

Ingredients for 4 servings:

  • Apples 2 pcs
  • Beets 300g
  • Cinnamon stick 1 pc
  • Pumpkin seeds 60g
  • Lemon oil 60ml
  • Coloured peppercorns – for sprinkling

Add sugar to the pot and pour in water. Boil. Add the cinnamon stick. Boil and let stand for 0.5 h. Then wash the apples thoroughly and cut them into pieces. Boil the sugar syrup with cinnamon again, put the apples in it and cook for about 2 minutes, then set the syrup with the apples aside to cool.

Wash and peel the beets. Grate on a fine grater or cut into very thin bars (Julienne).

Wash and dry the chilli peppers and cut them into thin strips.

Add pumpkin seeds to the heated pan and roast for about 3-4 minutes, then leave to cool.

Arrange lettuce leaves in a bowl. Top with beets, sliced chilli, and apple pieces; sprinkle pumpkin seeds one by one and pour lemon oil over the top. Finally, sprinkle the salad with freshly ground coloured peppercorns.
